The Idlito is named after the classic Indian savory dumpling known as idli. Idlis are usually made from a mixture of fermented black lentils and rice, but there are many varieties known and enjoyed all over India. In southern India they are commonly served for breakfast; in other regions they’re a typical dinner dish often served with chutney, lentil soup (sambhar), or stuffed with vegetables. Idlis are an ancient food dating back more than a thousand years in Indian history. Today, idlis are typically steamed in stainless steel idli molds that produce the classic round shape.
